Includes design, structure, graphics, installation and dismantle. A custom-built booth runs roughly $100 to $250 per square foot depending on finish level. A rental of the same footprint usually lands at 35 to 50 percent of the purchase price for one show.
Billed by the show
- Booth space (paid to the organizer)
- Material handling / drayage, where the space rate does not include it
- Electrical service, internet and rigging
- Booth cleaning and any union labor the venue requires
Published rates:
- Booth space: $45.50 per sq ft; 10×10 inline $4,550, current published rate
- Corner premium: $450 per corner, current published rate
- Drayage: About $195 per cwt, 200 lb minimum; Purple's 2026–2027 Javits planning figure
- Late or uncrated freight: 25–35% surcharge; Purple's 2026–2027 Javits planning figure
Key dates
- Design sign-off with Purple: Mid-December 2026
- By mid-December 2026: Design sign-off; equipment list with voltages and sampling menu agreed; booth number and corners sent from your Restaurant Events contract.
- January to mid-February 2027: Production in our Fishkill, NY shop; counters, oven surrounds and fabric graphics built, test-fitted and crated.
- About three weeks before move-in: Freight labels and Freeman paperwork filed; power, carpet and furniture orders placed at online pricing.
- Days before March 7, 2027: Move-in through the marshaling facility; our project manager runs the carpenters and electricians and tests every oven and cooler.
- March 7–9, 2027: Show days, 10 a.m. to 5 p.m. Sunday and Monday and 10 a.m. to 4 p.m. Tuesday; your Purple project manager stays on call.
- After 4 p.m. on March 9: Dismantle and re-crating; freight leaves on its dock call and the booth returns to Fishkill storage or ships to the next show.

Checklist
- Reserve space with Restaurant Events early; the 2026 floor sold out at 467 booths
- Decide whether your pizza products belong in the Pizza Tomorrow Summit Pavilion
- List every oven, fryer and cooler with voltage, amperage and shipping weight
- Approve the design and sampling menu by mid-December 2026
- Send Purple your booth number, size and corners from the online contract
- Request your Customer Invitations promo code and send it to your best accounts
- Book rooms only through Connections Housing, the show's official housing company
- Staff the booth 10 a.m. to 5 p.m. Sunday and Monday, and until 4 p.m. Tuesday
