What makes California Restaurant Show different, and how we build for it
Restaurant Events gave the Western Foodservice & Hospitality Expo back its original name, moved it from Los Angeles to Anaheim and produces it as a show sponsored by the California Restaurant Association. The floor is compact and senior: in 2026, 275 exhibiting companies filled 34,000 square feet of booths and more than 88% of attendees were decision-makers. Exhibitors' show-only deals are published on the organizer's Show Specials list, the Culinary Innovation Theater stages live chef demos, and pizza makers compete for the California Pizza Challenge in the Pizza Tomorrow Summit Pavilion. Education built with the CRA covers California regulations, food costs, labor and AI.
A show-only price they can act on, a demo short enough to watch between sessions, and someone at the counter who can quote terms, delivery and setup for a single location.
Food they can taste and equipment they can watch cook, from combi ovens to slicers, with yields, hold times and labor savings stated in numbers.
Proof the product scales across locations: California distributor coverage, rollout timing, staff training and answers on the state rules they hear about in the CRA sessions.

We build in our own production shop in Fishkill, NY, and our Las Vegas hub, ship to the Anaheim Convention Center, and install with our own project manager on the floor and vetted local labor. Predictable 30–45-day turnarounds, secure storage and pre-show QA.

Inside California Restaurant Show 2027
Rules that shape your booth
Restaurant Events lets a company sample a food product only if it manufactures or distributes that product, and only in sample sizes, under the venue's food and beverage rules. We size cups, boats and the portioning shelf so every serving reads as a sample.
In 2026 space cost $41.25 per square foot in 100-square-foot increments plus $350 per corner, with drape on inline booths but no carpet, tables, chairs or power. When you pay for a corner, we put product on one aisle and the demo on the other.
Culinary students register at $30 each, no more than 10 per school, with a faculty member or 21-plus chaperone for every five, and anyone under 18 found alone is escorted off the floor. We add a badge-scan step so pricing time goes to buyers first.
In 2026, move-in ran the Friday and Saturday before opening from 8 a.m., vendor labor ended at 6 p.m. and exhibitors left by 8 p.m.; load-out trucks checked in by 10 a.m. the day after closing. We schedule every labor task to finish before the cutoff.
Venue services from catering to internet run through the Anaheim Convention Center's Exhibitor Assistance desk, apart from the booth-service contractor, Shepard in 2026. We book Aramark for ice and Smart City for a wired POS line there, so both are live at opening.
Programs worth planning for
The pizza district of the floor: pizza-focused exhibits, three full days of education included with the show badge, and the California Pizza Challenge, hosted by the US Pizza Team and sponsored by Real California Milk.
Booked exhibitors with up-to-date payments send a product name and description, one high-resolution image and the offer's details, and Restaurant Events promotes the special on the show website, social channels and official app at no cost.
The organizer builds a co-branded graphic and promo code that admits your customers free, a $99 badge each; in 2026, invitations earned a credit of up to $2,000 toward the next year’s booth, and 2025 exhibitors averaged a $340 rebate.
The show's live demo stage, with an application form for presenters; in 2026 it hosted the Rapid Fire: Future Kitchen Performance Competition, eight chefs cooking on UNOX combi ovens for a $1,000 grand prize.
The California Restaurant Show is Restaurant Events' West Coast operator show; choose it over the National Restaurant Association Show in Chicago when your buyers are California owners and chefs and a compact booth inside your sales territory beats a national spend. Popular booth sizes at California Restaurant Show
Space here comes in 100-square-foot increments, and the entire 2026 floor held 34,000 square feet of booths. On a floor that size a 10×20 inline keeps you in scale with your neighbors and leaves room whenever equipment runs or food is served; we recommend a paid corner when a demo needs a second open aisle.

A countertop combi, pizza or fryer demo on one side, a tasting or point-of-sale counter on the other, and two stools for owner pricing talks.

04 Designing for restaurant food, equipment and technology suppliers at California Restaurant Show
Four things we get right for California Restaurant Show exhibitors
1Print the show special at the aisle
Attendees can browse exhibitors' show-only deals under Show Specials & Discounts before they reach the floor, and Restaurant Events pushes the same list through its social channels and app. We print your offer, product photo and booth number on an aisle-facing header and a counter card, with a promo-code or QR stand where staff can close the sale.
2Cook where the aisle can see it
In 2026 Sherry Yard and Sherief Shawky showed what combi ovens can do in a UNOX session on the Culinary Innovation Theater stage, so equipment on this floor is judged by what it cooks. We size the electrical order from your spec sheet, hide cords and the cooling gap inside the counter, and turn the oven door toward the aisle.
3Seat the owner who can sign
Decision-makers made up more than 88% of the 2026 audience, so the person at your counter can usually approve the order on the spot. We set a two-stool counter at the back of a 10×20 with a pricing screen, order pads and a card reader, apart from the tasting line.
Plan pizza booths for the pavilion
The Pizza Tomorrow Summit Pavilion ran its third year in 2026, with the US Pizza Team staging dough-stretch, box-folding and fastest-pizza contests for the California Pizza Challenge. For oven, dough, cheese and box suppliers we design a peel-height landing counter, a stacked-box display and a slice hand-off that keeps the crowd moving.

Logistics for California Restaurant Show 2027, handled
The Anaheim Convention Center sits at 800 W. Katella Avenue, with the Hilton Anaheim and Anaheim Marriott beside it and John Wayne Airport about 20 minutes away. Shepard handled booth services, furniture and shipping in 2026, while the building keeps its own exclusives: Aramark Sports & Entertainment for food and beverage and Smart City Networks for data, with show power from an approved electrical provider. Crates ship to the contractor's advance warehouse with a drayage line of roughly $170 to $180 per hundredweight on your proposal, and our project manager leads the build with vetted Southern California labor working to the building's union guidelines.
Hall rules, drayage estimates and freight deadlines for this building are in our Anaheim Convention Center exhibitor guide.
Hall guide
Two zones the show runs itself, and two building facts that shape every Anaheim Convention Center booth: the ceiling of the hall you build under, and the yard where your freight waits.
The show's live demo stage; its 2026 yellowfin tuna carving credited suppliers Maxfield Seafood and Fresh Island Fish and pointed the audience to their booth, #931.
Our advice: If your product appears on that stage, we print the session time and your booth number on the header so the theater audience can find you afterward.
The pizza district of the floor, where the US Pizza Team hosts the California Pizza Challenge's four culinary events and four Pizza Athletic categories.
Our advice: In 2026 the award ceremonies ran each afternoon, so we keep your oven counter and box display set back from the aisle the crowd fills.
Halls A to E total 813,607 square feet, and ceiling heights differ from hall to hall; ACC North, opened in 2017, adds two 100,000-square-foot carpeted levels.
Our advice: The ceiling over your booth depends on its hall, so we size towers and lighting once the floor plan places you.
Six acres of paved staging at 1629 S. Claudina Way, 2.1 miles from the halls and just off I-5, used for receiving freight and preparing move-in and move-out.
Our advice: When your freight is routed through the yard, we give the carrier its target time and the Claudina Way address, so drivers wait off-site rather than circling Katella Avenue.

California Restaurant Show exhibitor questions
Questions exhibitors ask us before California Restaurant Show
How much does a booth at the California Restaurant Show 2027 cost?
On this compact floor the tier that fits is usually a rental: $3,500 to $8,000 for a 10×10 and $7,500 to $15,000 for a 10×20, while a custom 20×20 island runs $50,000 to $120,000. Here the price moves with live cooking equipment, refrigeration and corner placement. Restaurant Events bills space separately: $41.25 per square foot in 2026, plus $350 per corner.
Can we hand out food samples at the California Restaurant Show?
Manufacturers and distributors can, provided every serving stays sample-sized, the condition the organizer sets on its booth-rate page. A seated tasting or customer lunch becomes a catering order from Aramark Sports & Entertainment, the Anaheim Convention Center's exclusive food and beverage provider, and we place it for you. Behind the counter we build cold holding and a plating station so staff serve quickly.
When should we book our California Restaurant Show 2027 booth?
Early: Restaurant Events reported a sold-out exhibit hall in 2025. You email the account executive with the space you want, and once your rep has your company details the organizer sends a link and password for the online booth contract. On our side, approving the design in early July 2027 leaves room for production in Fishkill and lands your crates at the advance warehouse on time.
Can we rent a booth for the California Restaurant Show, and what does a rental include?
Yes. A rental here is a lit fabric wall plus a demo or tasting counter with lockable storage, shipped both ways, installed and dismantled under one fixed proposal. For pizza and equipment brands we can pair a rented wall with a custom oven counter from our Fishkill, NY shop, which then travels with you to later shows.
Can we set up our own booth at the Anaheim Convention Center?
Only a display one person can assemble without tools in under 30 minutes, with no piece longer than 10 feet. The building does not require union labor, yet unions are represented there and most contractors use union crews, so anything heavier goes to contracted labor. We book that labor, and our project manager runs it on the floor.
Can we exhibit in the Pizza Tomorrow Summit Pavilion?
Pizza oven, dough, cheese and box suppliers are who it is built for: pizza-focused products, equipment and ingredients around the California Pizza Challenge, which Real California Milk sponsors and the US Pizza Team hosts. The pavilion page links straight to the floorplan and booking, so we pick a pavilion booth with you before you sign and order the oven's power with the rest of your electrical.
What does drayage cost at the Anaheim Convention Center for this show?
Budget roughly $170 to $180 per 100 pounds, our Anaheim planning figure for 2026 and 2027, with every shipment billed as at least 200 pounds; the contractor's tariff in the exhibitor kit sets the binding rate. Combi ovens, deck ovens and product cases carry most of a restaurant booth's weight, so we weigh each crate before it leaves Fishkill and list the drayage estimate on your proposal.
Do you handle booth-service orders and Anaheim Convention Center services?
Yes. In 2026 Shepard was the booth-service contractor, from furniture to shipping, and we place material handling, flooring and furniture with the 2027 contractor once its kit opens. We also order power for every appliance from the show's electrical provider and file the building's catering and internet requests, then send you one calendar of every order deadline.
Can we reuse our California Restaurant Show booth at other shows?
The counters and walls we build for Anaheim travel well to International Pizza Expo in Las Vegas, to Natural Products Expo West in this same building each March, or to the New York Restaurant Show, which Restaurant Events runs at the Javits Center. We keep the booth in storage between dates, reprint only the headers that name the show and route it to the next advance warehouse.
When is the California Restaurant Show 2027?
Sunday, September 12 to Tuesday, September 14, 2027, at the Anaheim Convention Center. The show floor opens at 10 a.m. each day, closing at 5 p.m. on Sunday and Monday and at 4 p.m. on Tuesday, and badge pick-up starts at 8:30 a.m. The 2026 edition ran August 23–25 in the same building.
Where is the California Restaurant Show 2027 held?
Back at the Anaheim Convention Center, 800 W. Katella Avenue, for a third straight year; the 2024 edition was held at the Los Angeles Convention Center. Restaurant Events publishes the 2027 floor plan online, Connections Housing is the official housing partner, and Visit Anaheim puts John Wayne Airport (SNA) 13 miles from Anaheim.
How many people attend the California Restaurant Show?
More than 7,000 restaurant, foodservice and hospitality professionals attended in 2026, buyer attendance grew 6% over 2025, and over 88% of attendees were decision-makers. The 2025 show drew more than 7,000 registrants and 230+ exhibitors, while the 2024 edition in Los Angeles drew nearly 5,000 professionals and 220+ exhibiting companies, half of them new to the show.
Is the California Restaurant Show open to the public?
No. Restaurant Events runs it as an industry-only event, and one age rule covers attendees, exhibitors and media alike: an adult of 21 or over, whether parent, guardian or chaperone, must stay beside every minor. Exhibitors can still bring their own customers, since each booked company gets a co-branded invitation and promo code that admits them free.
Who organizes the California Restaurant Show?
Restaurant Events, LLC produces it, and the show is sponsored by the California Restaurant Association. Tim von Gal and Doug Miller formed the company and, in May 2023, acquired the Western Foodservice & Hospitality Expo from Clarion Events, then gave it back its original California Restaurant Show name in March 2024. They also run the New York, Florida and Carolinas Restaurant Shows.
