International Pizza Expo 2027 booths in Las Vegas that bake, slice and sell

Your booth works like a busy pizzeria line, so owners watch your oven, flour or sauce perform and taste the result before they talk price. In the LVCC West Hall, Freeman places the ovens by forklift on our plan and our Las Vegas crew builds the counters around them.

What makes International Pizza Expo different, and how we build for it

Pizza Expo has run for more than 40 years as Pizza Today’s show for pizzeria operators, and the floor smells like it: the International Pizza Challenge bakes off on site, the World Pizza Games stretch dough and fold boxes against the clock, and the International Italian Sandwich Championship runs alongside. Owners come from School of Pizzeria Management Workshops, the Beer & Bull Networking night and, since 2026, demos in the Pizza Today Village, straight to the booths. They buy what they can watch bake and taste, so a booth here works like a busy pizzeria line.

Independent pizzeria owners

A product they can watch work, a fair price on the spot and a person who understands a 10-seat shop running two ovens on a Friday night.

Multi-unit operators and buyers

Consistency, throughput and supply numbers, plus a quiet table to talk about rollout across locations and contract terms.

Chefs, pizzaioli and kitchen managers

Hands-on time with ovens, mixers, flour and cheese, and staff who can talk hydration, bake temperature and topping cost.

Your team in Las Vegas

Two shops, one project manager, every hall

We build in our own production shop in Fishkill, NY, and our Las Vegas hub, ship to the Las Vegas Convention Center, and install with our own project manager on the floor and vetted local labor. Predictable 30–45-day turnarounds, secure storage and pre-show QA.

Your team walks into a lit, stocked booth. You just show up.

Popular booth sizes at International Pizza Expo

The Pizza Expo floor mixes oven and ingredient islands with rows of 10×10 and 10×20 inlines from sauce, box, POS and smallwares suppliers. We recommend a 10×20 with a working tasting counter for ingredient and tech brands, and a 20×20 island when an oven or a full make line runs in the booth.

04 Designing for pizzeria equipment, ingredient and technology suppliers at International Pizza Expo

Four things we get right for International Pizza Expo exhibitors

Pizzaiolo in a white hat working a peel in front of a wood-fired oven1

Plan the oven before the walls

Deck, conveyor and wood or gas ovens weigh hundreds to thousands of pounds and need venting rules, power or gas and forklift placement. We lay out the oven position, clearances and utility drops first, then design the booth around a working bake line.

Female barista pouring milk into a black coffee cup behind a cafe counter2

Build a line buyers recognise

Owners judge equipment and ingredients by how they behave on a real make line. A stainless prep counter, dough station and oven in pizzeria order let your team bake, slice and hand out samples without crossing traffic, and lets visitors picture it in their own kitchen.

3

Design sampling around the rules

Sampling at Pizza Expo follows the Exhibitor Service Manual and the venue catering rules. We build in handwashing, sneeze guards, cold storage, trash and a sample hand-off point at the aisle edge so the queue stays outside your demo space.

4

Give owners a place to sit

Independent owners buy at the show when the numbers make sense. A two-seat counter or small table set back from the oven heat gives your rep room to run cost per pie, financing or POS pricing while the crowd keeps tasting up front.

05 Las Vegas Convention Center · Las Vegas

Logistics for International Pizza Expo 2027, handled

Pizza Expo moves into the LVCC West Hall on April 11–12 and moves out April 15–16. The West Hall has high clear heights, wide aisles and the best truck docks on the campus, but Las Vegas is a union city: forklifts, pallet jacks and oven placement go through Freeman, the official decorator, and Teamsters Local 631. We file as your Exhibitor Appointed Contractor, ship everything to the Freeman advance warehouse so it is on the floor before install, order electrical and utilities, and our Las Vegas crew builds the booth while hotels on Paradise Road keep your team close.

Hall rules, drayage estimates and freight deadlines for this building are in our Las Vegas Convention Center exhibitor guide.

Hall guide

Pizza Expo fills the West Hall, the newest building on the Las Vegas Convention Center campus. Its docks and open floor suit heavy ovens, but every oven still moves on the official decorator's forklifts.

West Hall exhibit floor

Opened in 2021 with high clear heights, wide aisles and column-free spans, and generous rigging points for hanging signs over islands.

Our advice: Sampling queues fit in the wide aisles, and a hanging sign over an oven island reads across the hall, so it is worth pricing on a 20×20.

West Hall truck docks

The best truck docks on the LVCC campus feed the West Hall. Forklifts, pallet jacks and anything on wheels go through Freeman and Teamsters Local 631.

Our advice: Deck and conveyor ovens ship crated to the advance warehouse, and we book forklift placement so each oven lands on its marked spot before counters go in.

International Pizza Expo exhibitor questions

Questions exhibitors ask us before International Pizza Expo

How much does a booth at Pizza Expo 2027 cost?

Ingredient and tech brands on a 10×20 rental spend $7,500 to $15,000 with us, an oven-ready custom 20×20 island runs $50,000 to $120,000, and a 10×10 rental starts at $3,500. At Pizza Expo the number moves with ovens, sinks, sampling fixtures and electrical drops. Booth space is billed by Pizza Today and show services by Freeman, separate from our fixed proposal.

What is the deadline to order a booth for Pizza Expo 2027?

Pizza Today posts its service deadlines in the Exhibitor Service Manual, and we put each one on your schedule. At the LVCC the EAC form and certificate of insurance are usually due 30 days before move-in. We need design sign-off by early February 2027 to build in 30 to 45 days and ship by mid-March.

Can we rent a booth for Pizza Expo, and what does a rental include?

Yes. A rental covers the frame, your printed graphics, a tasting or demo counter, lighting, flooring options, shipping, install and dismantle. Many ingredient and tech exhibitors rent the structure and add one custom counter with prep space behind it, so the booth works like a line without the cost of a full custom build.

Can we set up our own booth at the Las Vegas Convention Center?

Your full-time employees may assemble the exhibit with hand tools, but contract labor, forklifts, pallet jacks and oven placement go through Freeman and Teamsters Local 631. We file as your Exhibitor Appointed Contractor with insurance, so our project manager and Las Vegas crew build the booth while your team prepares dough and samples.

Can we bake and hand out samples in our Pizza Expo booth?

Yes, exhibitors bake and sample across the floor. Sampling requirements and catering orders sit in Pizza Today's Exhibitor Service Manual and the venue catering rules. We design the booth to meet them, with handwashing, sneeze guards, cold storage, trash and a sample hand-off at the aisle edge, and we order the electrical your ovens need.

What does drayage cost at Pizza Expo and who pays it?

Material handling at the LVCC is billed by Freeman per hundredweight with a 200 lb minimum per shipment, and surcharges stack for uncrated, late or off-target freight. Ovens make this a large line at Pizza Expo. You pay it to the show, we consolidate crates onto one bill of lading and put the estimate on your proposal.

When is move-in and move-out for Pizza Expo 2027?

Move-in runs Sunday, April 11, 1 to 8 p.m. and Monday, April 12, 8 a.m. to 8 p.m. The floor opens April 13 and closes at 2 p.m. on April 15. Move-out runs that evening until 10 p.m. and Friday, April 16, until noon, so we plan oven crating and freight pickup around both windows.

Can we reuse the Pizza Expo booth at other shows?

Yes. The same counters and graphic walls travel well to the National Restaurant Association Show in Chicago, the Texas Restaurant Show in San Antonio and IDDBA in Atlanta. We design modules that scale between a 10×20 and an island, and store the booth at our Las Vegas shop between shows.

Do you handle Freeman orders for Pizza Expo?

We order electrical, forklift placement and cleaning through Freeman, book your advance warehouse delivery and send you one schedule and one budget. You see every service order on the proposal before we file it, so nothing arrives as a surprise invoice after the show.

Before you sign with anyone

Five questions to ask any exhibit builder for International Pizza Expo:

  1. Is every fee on the proposal, including what the show contractor bills?
  2. Who builds the booth: your own shop or a subcontractor?
  3. Will your project manager be on the floor for install and dismantle?
  4. What exactly is in the rental, and what is billed by the show?
  5. Where does the booth go after the show, and what does storage cost?

Common situations

Already own a booth? We refresh the graphics, repair what is worn, ship it, install it and store it between shows. You keep the structure you paid for.

Exhibiting from outside the US? We are your team on the ground: freight to the advance warehouse, show-service orders, installation and storage, with one project manager answering your emails in your time zone.

Short on time? A rental with your graphics can be ready in two to three weeks. We tell you on the first call what is realistic for your date.
