At a specialty food show, the buyer decides with a toothpick in hand. Purple Exhibits provides Winter Fancy Food Show booth staff for food and beverage makers: sampling hosts who plate and explain, demo presenters in chef whites, meeting hosts for booked buyers, greeters and trade show models. Every role costs $85 per hour per person, with a four-hour minimum. The crew lives in the Bay Area, so you never pay for their flights, hotels or travel. The show now runs under the name Winter FancyFaire, and the 2027 edition fills Moscone Center in San Francisco on January 17–19. Before the halls open we taste every SKU with you, learn the allergens and the show terms, and set up the counter so buyers get a clean plate and a straight answer. Book by early December for the widest choice, or call with 72 hours’ notice for a rush crew.

01 · Tray service hostess (top of page). A hostess in a black logo polo carries a bamboo tray of sparkling flutes, a strawberry in each, through a busy booth lounge. Smile on, tray level, eyes on the guest.
That is the manner we bring to a food floor: calm hands, clean counters and a quick, friendly answer about what is on the plate.

Best for: Launches, dinners, receptionsSend your dress code and brand colors with the booking. We brief shoes, hair tied back for food stations and badge placement. January in San Francisco is cool and often wet, so staff arrive in a coat and change at the booth.
Set your counters, demos and days. The ticket counts the crew, prices it at $85 per hour and estimates how many tasting portions to ship.

The full line sits at eye level with prices hidden and case packs on cards. A brand ambassador names the new items and the best seller, and offers a line sheet to anyone who lingers.
The heart of the booth. A sampling host plates small portions, keeps picks and napkins in reach, reads the allergen card and asks one question: what kind of store do you buy for?
A product presenter in whites cooks, pours or pairs on a posted schedule. Between demos the station is wiped down and restocked so the next round starts clean.
Grocery and distributor buyers book time with your sales lead. A meeting host checks the list, seats each buyer and offers a full tasting plate at the table.
Behind a curtain or counter: coolers, back stock, clean utensils and waste bags. Hosts restock here so the tasting counter never runs dry in front of a buyer.
The greeter reads the badge, asks “retail, foodservice or distribution?” and walks each visitor to the counter, the demo or the buyer table.

Buyers at a specialty food show taste hundreds of things in a day. Here is how our hosts make yours the one they remember.
One bite tells the story. Hosts portion each SKU the same way all day, so the last buyer tastes what the first one did.
Buyers ask practical questions with their mouth full. Hosts learn the short answers during the walkthrough.
A good tasting ends with a name, not an empty cup. Hosts flag serious buyers and walk them to your sales lead.

The Specialty Food Association counts thousands of buyers among the visitors. They do not all want the same thing from your booth.
Short on time and booked in advance. Wants the full line on one plate, the price structure and proof the brand can ship. The meeting host seats them on time and keeps the table quiet.
Buys with their own money and decides fast. Tastes everything. A sampling host learns which items suit a small shop and points them to minimum orders.
Looks at margins, freight and how a line fits their book. A booth rep captures region, volume and contact, then hands the badge to your sales team.
Cares about yield, pack size and how the product cooks. The demo presenter shows it on the heat and answers kitchen questions in kitchen language.
Seven jobs we fill on a specialty food floor, what each one covers and how many a typical booth books.

Models stand with your launch item, award display or packaging wall so buyers and food press stop for a photo. They learn the product name and the one-line story first.
Hosts plate small portions, keep the counter clean and explain origin, ingredients and allergens. Your exhibitor manual sets the food-handling rules, and we brief to them.
Presenters in chef whites cook, pour or pair your product on a schedule, or assist your own chef so the station runs on time.
Ambassadors work the shelf wall and the aisle, trade line sheets for a badge scan and bring curious buyers to the counter.
Reps qualify each visitor by channel, note volume and region and log the lead on your tablet or lead app for your sales team.
Hosts run the buyer table schedule, greet each appointment by name and serve a full tasting plate during the meeting.
A greeter reads badges at the aisle and sends retail, foodservice and distribution visitors to the right person in seconds.
Importers and overseas makers often need a second language at the counter. Tell us which ones, and the quote confirms who is free.
Easy with buyers, careful with food and clear about your line. These are the five roles food and beverage brands book most for the show.

Presenters with a headset mic who run a cooking or pairing demo and talk the aisle through each step.

Ambassadors who scan a visitor badge and note whether the buyer works in retail, foodservice or distribution.
