4 ft up front, 8 ft behind: Winter FancyFaire 2027 booths in San Francisco

The standard Winter FancyFaire booth is 100 square feet with a 4-foot limit across its front half, so we build tasting counters that sell at that height and carry your brand on the back wall. At Moscone we file the Freeman orders and run the I&D Local 510 crew through the 3rd Street docks.

What makes Winter FancyFaire different, and how we build for it

Winter FancyFaire is the Specialty Food Association's reinvented winter show.It replaced the Winter Fancy Food Show after that show's final Las Vegas run, drew 12,000+ professionals to San Diego in January 2026 and now moves to Moscone Center to open the buying year. New brands gather in the SFA Spark Pavilion and Debut District, category pavilions cover beverage, confectionery and snacks, and the Good Food Mercantile runs on Sunday only. Attendees taste sofi Awards finalists before the winners are announced live, and the Campus Tasting Trail puts member products on restaurant menus in Hayes Valley, the Castro and Chinatown. Nothing is sold on the floor: the booth exists to earn the opening order.

Retail and grocery buyers

Buyers from chains and independents, with Whole Foods, Williams Sonoma and World Market on SFA's Who Attends list, want a quick taste, the shelf-ready pack beside it, and case pack, minimums and launch timing for the new year's resets.

Distributors and importers

Hosted buyers from distribution and import channels, and international buyers on the Food Export buyers mission, need the full range in view, pallet and lead-time answers, and a seat for the meeting they booked before the show.

Chefs and foodservice operators

Chefs who cook in the Discovery Kitchen or put products on Campus Tasting Trail menus look for foodservice formats, yields and prep times, and a sample served the way it would land on a plate.

Your team in San Francisco

Two shops, one project manager, every hall

We build in our own production shop in Fishkill, NY, and our Las Vegas hub, ship to the Moscone Center, and install with our own project manager on the floor and vetted local labor. Predictable 30–45-day turnarounds, secure storage and pre-show QA.

Rules that shape your booth

Four feet in front, eight behind

Linear booths may rise to 8 feet in the rear half but only 4 feet in the front half, and peninsulas and islands of 400 square feet reach 16 feet. We keep counters, risers and screens under the front line and put height on the back wall.

Organizer rule

Hanging signs over peninsulas, islands and pavilions

Only peninsula, island and pavilion booths may hang a sign, its bottom at least 10 feet up and its top no higher than 16, with written SFA approval and no neon or illuminated faces. We draw a printed fabric sign and file the approval.

Organizer rule

Write orders, never sell

The show is order-writing only: no sales, deliveries or payments on the floor, and samples and literature stay inside your exhibit space. We build an order desk with sell sheets and keep every sampling point behind your booth line.

Organizer rule

Drawings for 20×20 and larger

Exhibits of 20×20 feet or more submit drawings to SFA, platforms need a building permit, and every display material must meet the NFPA 701 flame standard. We send the drawings and supply flame certificates for fabrics and graphics.

Organizer rule

Keep sound under 85 decibels

Music is banned unless it is the product, speakers must face inward, and booths louder than 85 decibels at the aisle can be closed. We fit small inward-facing speakers and captioned video so a demo never drowns out the tasting.

Organizer rule

04 Designing for specialty food and beverage makers at Winter FancyFaire

Four things we get right for Winter FancyFaire exhibitors

Curved glass cheese case with labeled wedges and wheels in a gourmet shop1

Sell below the 4-foot line

In a Winter FancyFaire inline booth, everything in the front half stays under 4 feet and the back half under 8. We set a 42-inch tasting counter at the aisle, put retail packs on low risers beside each sample, and carry the brand on the back wall, where it reads from down the aisle.

Labeled jars of spreads and sauces on wooden shop shelves with chalkboard price tags2

Build an order desk, not a till

Winter FancyFaire is an order-writing show: selling, delivering goods or taking payment on the floor can close your booth. We build a small order desk with sell sheets, case-pack and minimum details and a tablet for the order form, so a buyer who likes the sample leaves with terms.

Hand holding an embossed craft chocolate bar above bars topped with dried strawberries and oats3

Cook electric, sample on permit

Moscone requires a San Francisco health permit and a Legends Global Sampling Form for every sampling booth, and any flame triggers a Fire Department permit. SFA's rules also bar flammable gases inside the building. We design hot samples around induction and electric holding, and order power through Freeman early so IBEW Local 6 has the outlets live before your first prep shift.

Woman in a cap and brown apron slicing a block of cheese at a market counter4

Be plated by 9:30 a.m.

Buyer badges enter the halls at 9:30 a.m., half an hour before the floor opens, and Curated Connections meetings run in the Buyer Lounge before full opening. We build restock storage and a prep shelf behind the counter so the first plates are out when buyers arrive, and the booth stays staffed until 3 p.m. Tuesday.

Logistics for Winter FancyFaire 2027, handled

Moscone is a union building and Freeman is SFA's general contractor: I&D Local 510 installs exhibits, Teamsters Local 2785 move freight and IBEW Local 6 wires booth power, and electrical, plumbing, rigging, drayage and catering cannot go to an exhibitor-appointed contractor. Material handling costs $1.48 a pound direct or $1.51 through the Freeman warehouse, with 200 free pounds per 10×10 for SFA members. Trucks reach the North and South docks from the west side of 3rd Street between Folsom and Howard, with trailers up to 53 feet. Move-in runs January 14–16 by booth size. We register as your EAC in Map Your Show, file the Freeman orders, and a Purple project manager leads the build from the first crate off the truck.

Hall rules, drayage estimates and freight deadlines for this building are in our Moscone Center exhibitor guide.

Hall guide

Moscone's own calendar lists Winter FancyFaire in Moscone North and South, the connected buildings set beneath Yerba Buena Gardens. Here is what the halls and docks those buildings use mean for your booth.

Moscone South, Halls A–C

Column-free exhibit space under 37-foot ceilings; Hall A is served by four Blue Dock bays and Hall C by three Green Dock bays.

Our advice: Ceiling height is never the limit here: SFA caps islands at 16 feet (20 feet in International Pavilions), so we spend your budget on counters and graphics, not tall structure.

Moscone North, Hall F

138,631 square feet under 28-foot ceilings, served by nine Red Dock bays, one of which holds a refrigerated truck.

Our advice: A 16-foot island sign still clears this ceiling easily; we label every crate with your booth number so Teamsters deliver it to the right aisle.

3rd Street docks and marshaling

North and South trucks enter from the west side of 3rd Street between Folsom and Howard, trailers top out at 53 feet and 13 feet 6 inches, and a marshaling-yard check-in can be required.

Our advice: We book carriers that fit those limits and schedule outbound pickup early in move-out, so your crates are not in the last-morning queue at the 3rd Street docks.

Winter FancyFaire exhibitor questions

Questions exhibitors ask us before Winter FancyFaire

How much does a booth at Winter FancyFaire 2027 cost?

SFA sells space in 100-square-foot units, so price the 10×10 tier first: $3,500 to $8,000 rented, $8,000 to $25,000 custom, with a 10×20 custom build at $15,000 to $45,000. Space itself is $50.47 a square foot for members, plus $800 per corner. At Moscone the swing comes from I&D Local 510 hours, rented refrigeration and freight billed at $1.48 a pound.

What is the deadline to order a booth for Winter FancyFaire 2027?

SFA's hard date is December 17, 2026, the last day members can order the free booth package of tables, chairs, carpet and an 11×17 sign on FreemanOnline. The 2027 Space Draw has closed, and remaining booths sell first come, first served. Our own cutoff is earlier: we lock your counter drawings in early November so Fishkill builds through Thanksgiving and crates ship before the holidays, ahead of the January 14–16 move-in.

Can we rent a booth for Winter FancyFaire, and what does a rental include?

We do, and SFA's booth shapes it. Each space arrives with an 8-foot black back drape and 3-foot side drape, so the rented back wall hides that drape behind your branding, and the rented tasting counter stays under the 4-foot front-half line. We price the lighting, freight to Moscone, the Freeman orders and I&D labor for setup and teardown into one fixed proposal. A 10×20 rental runs $7,500 to $15,000.

Can we set up our own booth at Moscone Center?

Moscone is a union floor: I&D Local 510 installs displays, Teamsters Local 2785 handle freight and forklifts, and IBEW Local 6 wires booth power. Electrical, plumbing, rigging, drayage and catering stay with the official vendors and no exhibitor-appointed contractor may take them. We register as your EAC through the Map Your Show dashboard and run the I&D crew with our own project manager.

How tall can our booth be at Winter FancyFaire?

Inline booths stop at 8 feet in the back half and 4 feet in the front half, so a buyer 20 feet down the aisle can still see your neighbor. Peninsulas and islands of 400 square feet or more may reach 16 feet, or 20 feet in International Pavilions. Hanging signs fly only over peninsula, island and pavilion booths, between 10 and 16 feet, and never lit.

Can we sample and cook in our booth at Moscone?

Sampling needs a San Francisco health permit, which SFA and each exhibitor apply for at least two weeks before the first show day, plus Moscone's Legends Global Sampling Form by the same date. Open flame needs SFA approval and a Fire Department permit, and SFA bars flammable gases inside the building, so propane stays home. Electric cooking needs no flame permit. We file the forms with you.

What does drayage cost at Winter FancyFaire, and who pays?

Freeman bills you $1.48 per pound for freight sent direct to Moscone and $1.51 per pound through its warehouse. SFA members get 200 pounds free per 10×10 as a credit on the final Freeman bill, so a 20×20 carries 800 pounds at no charge, though the credit cannot combine with the Exhibitor Driven program. Our proposal lists each crate's weight and the bill after that credit.

We are first-time exhibitors. Is the SFA Spark Pavilion enough, or do we need a booth?

If your company has never exhibited at or attended an SFA show, the Spark Pavilion sells a one-day kiosk for $999 or a three-day tabletop for $1,699, each with a counter-height table, two stools and an ID sign. A three-day 5×10 on the show floor costs $2,523. Each level can be booked for two SFA shows, so we print graphics for it and plan the custom booth you grow into.

Can we reuse the booth at the Summer Fancy Food Show and other shows?

Yes, if we plan for it now. A Winter FancyFaire back wall and low tasting counter can follow you to the Summer Fancy Food Show at the Javits Center in July 2027, Natural Products Expo West in Anaheim or IDDBA in Atlanta. Those floors set their own height and union rules, so we redraw the plan for each, swap graphics and keep the kit in storage between shows.

When is Winter FancyFaire 2027?

Winter FancyFaire 2027 runs Sunday, January 17 to Tuesday, January 19, 2027, at Moscone Center in San Francisco. The hall opens at 10 a.m. each day, closes at 4 p.m. on Sunday and Monday and at 3 p.m. on Tuesday, and exhibitors move in January 14–16 by booth size. SFA has already booked January 23–25, 2028 in San Francisco.

Where is Winter FancyFaire 2027 held?

Moscone North and South at Moscone Center, 747 Howard Street, San Francisco. The venue has no parking of its own; BART and Muni stop at Montgomery station, a few minutes' walk from both buildings. San Francisco Travel puts SFO 14 miles from downtown, and onPeak is the only official hotel provider for the 2027 show.

How many people attend Winter FancyFaire?

The first Winter FancyFaire, in San Diego in January 2026, brought together more than 12,000 industry professionals and over 1,000 exhibitors from 30 countries, SFA reported. The Winter Fancy Food Show it builds on drew 12,000 participants and 1,050+ exhibitors to Las Vegas in 2025, and 13,000+ participants with 1,052 exhibitors in 2024.

Is Winter FancyFaire open to the public?

No. SFA runs it as a trade-only event, and only people and businesses connected to the specialty food industry can register. Each attendee shows proof of employment, such as a company email, two recent pay stubs or a company photo ID, because business cards do not count, plus proof of the business itself. Registration fees are final.

How do I get a booth at Winter FancyFaire?

You book it with the Specialty Food Association, which owns the show along with the Summer Fancy Food Show and the sofi Awards. Tier 2 members chose first in Space Draw, in Priority Point order; what remains sells first come, first served through the Book Exhibit form, at $50.47 a square foot for active members and $56.65 in International Pavilions.

Before you sign with anyone

Five questions to ask any exhibit builder for Winter FancyFaire:

  1. Is every fee on the proposal, including what the show contractor bills?
  2. Who builds the booth: your own shop or a subcontractor?
  3. Will your project manager be on the floor for install and dismantle?
  4. What exactly is in the rental, and what is billed by the show?
  5. Where does the booth go after the show, and what does storage cost?

Common situations

Already own a booth? We refresh the graphics, repair what is worn, ship it, install it and store it between shows. You keep the structure you paid for.

Exhibiting from outside the US? We are your team on the ground: freight to the advance warehouse, show-service orders, installation and storage, with one project manager answering your emails in your time zone.

Short on time? A rental with your graphics can be ready in two to three weeks. We tell you on the first call what is realistic for your date.
