Fired, plumbed and chilled: The NAFEM Show 2027 booths in Orlando

Dealers, consultants and operators at The NAFEM Show judge equipment by working it, so we build counters, utility runs and sightlines that let them run your units inside the booth. At the OCCC, electrical and rigging are in-house crews and Freeman controls the docks, so we order both early.

What makes The NAFEM Show different, and how we build for it

The NAFEM Show admits only manufacturers whose products sit on the NAFEM Approved Product Category List, so every booth is a kitchen equipment or supplies maker talking to the people who specify and buy kitchens.Training Time opens the floor at 8 a.m. on Friday and Saturday for CFESA, FCSI and FEDA members and buying groups to learn your equipment before the doors open. The WHAT'S HOT! WHAT'S COOL! gallery showed 42 new products in 2025, and every operator in the Hosted Buyer Program must complete 15 scheduled meetings with exhibitors. Host America debuts in 2027, a NAFEM and Fiera Milano showcase of Italian coffee, vending and gelato equipment, and the U.S. Culinary Open returns with twelve chefs.

Dealers and distributors

Units they can open, clean and explain to their own sales teams, plus lead times, margins and a quiet corner during Training Time to teach a dealer group before the 9 a.m. opening.

Foodservice consultants

Footprints, clearances, utility loads and certifications they can write straight into a kitchen specification, with cut sheets in hand and an engineer who can answer venting and voltage questions.

Operators and chefs

Restaurant, healthcare, education, corrections and senior dining operators want to watch the unit cook, hold or chill, taste the result and hear the labor and energy numbers.

Your team in Orlando

Two shops, one project manager, every hall

We build in our own production shop in Fishkill, NY, and our Las Vegas hub, ship to the Orange County Convention Center, and install with our own project manager on the floor and vetted local labor. Predictable 30–45-day turnarounds, secure storage and pre-show QA.

Rules that shape your booth

Sampling runs through Sodexo Live!

Sodexo Live! is the OCCC's exclusive caterer: demo food you bring needs its approval form, traffic-builders like coffee and popcorn must be bought from it, and prep stays 5 feet from the aisle. We set the counter back and file the form.

Organizer rule

Heat and gas need Fire Marshal approval

Each gas appliance, open flame or smoke-producing device goes to the OCCC Fire Marshal for individual approval under NFPA 96, with a 5-pound ABC extinguisher within 30 feet. We submit the documentation and design venting and extinguisher space into the booth.

Organizer rule

Inline walls stop at 8 feet

Inline and corner booths max out at an 8-foot back wall, with everything within 5 feet of the aisle held to 4 feet; perimeter booths reach 12 feet. We place tall reach-ins and ovens at the back and keep demo counters low up front.

Organizer rule

Approved products only, no dealer logos

Only items on the NAFEM Approved Product Category List may be shown, and no distributor, dealer or supplier logo may appear in the booth. We check every graphic and display against the list and strip dealer marks before anything prints.

Organizer rule

Islands cap at 16 feet

Islands, split islands and peninsulas build to 16 feet, hanging signs top out at 20 feet with at least 12 feet clear beneath, and their dimensioned drawings are due November 18, 2026. We draw every item's height and file the plan.

Popular booth sizes at The NAFEM Show

NAFEM sells inline booths 10 feet wide in 10, 12 and 15-foot depths, peninsulas usually 30 feet wide and islands from 400 square feet, and walk-in cooler makers on inlines must buy the 15-foot depth. We recommend a 10×20 for two or three working units, or a 20×20 island when a cook line runs live.

04 Designing for commercial foodservice equipment and supplies manufacturers at The NAFEM Show

Four things we get right for The NAFEM Show exhibitors

Stainless steel commercial kitchen with pots, strainers and utensils hanging on a rail1

Pull every demo inside the line

NAFEM requires demonstrations to be watched from inside your space, not from the aisle, bans lines outside the booth and keeps food prep 5 feet back from the aisle. We set demo counters deep in the footprint and leave standing room in front of them, so a crowd forms on your carpet.

Chef in an apron preparing food at a commercial kitchen oven2

Engineer utilities for Fire Marshal review

Gas appliances, open flame and smoke-producing units each get individual OCCC Fire Marshal review under NFPA 96, with a 5-pound ABC extinguisher within 30 feet. We compile your spec sheets into the submission, design the venting clearances and order OCCC electrical through the online portal, which avoids the phone-order fee.

Woman working behind a restaurant kitchen serving counter under hanging lamps3

Build a bay for Training Time

From 8 to 9 a.m. on Friday and Saturday, CFESA, FCSI and FEDA members and buying groups have the floor before attendees. We add a training bay with access panels open, a cutaway or exploded view of the unit and a screen, so your dealer groups learn service points, not just features.

4

Sell your specs, not your dealers

NAFEM bans distributor and dealer logos in the booth and any graphic that compares your product with another company's. We write graphics around your own capacity, energy, footprint and certification numbers, add QR codes to cut sheets and keep video under the 80/80 sound rule.

05 Orange County Convention Center · Orlando

Logistics for The NAFEM Show 2027, handled

The Orange County Convention Center runs two buildings with separate docks: West Building docks sit off Convention Way, North/South docks on the north and south sides. Freeman is NAFEM's general services contractor and controls dock access, and only full-time staff may hand-carry, with no dollies or flat trucks. The OCCC's own crews do every electrical drop and every rigging point, and their discounted rate ends roughly three weeks before move-in, so those orders go in first. We register as your EAC with NAFEM by January 4, 2027, ship to the advance warehouse, file covered-booth and Fire Marshal paperwork, and install with our own project manager between 8 a.m. February 7 and the 4 p.m. February 10 set-up deadline.

Hall rules, drayage estimates and freight deadlines for this building are in our Orange County Convention Center exhibitor guide.

Hall guide

The NAFEM floor puts a first-timer zone at its center, adds a new Italian showcase and sets separate height rules for inline, perimeter, peninsula and island space. Here is what each means for your build at the Orange County Convention Center.

First-Time Exhibitor area

A designated area in the center of the floor, open only to companies exhibiting at The NAFEM Show for the first time, with new-exhibitor recognition on the floor and in show materials.

Our advice: Center-floor inlines still cap back walls at 8 feet and anything within 5 feet of the aisle at 4 feet, so we put your tallest unit at the back.

Host America

Making its debut at the February 2027 show, Host America is NAFEM's partnership with Fiera Milano, organizer of Host Milano, showing Italian-made coffee, vending, gelato and refrigeration equipment.

Our advice: For an Italian manufacturer we handle the U.S. side: freight to the advance warehouse, install with our project manager, dismantle and storage until the next show.

Islands, split islands and peninsulas

Islands start at 400 square feet, peninsulas usually run 30 feet wide, all build to 16 feet, and hanging signs top out at 20 feet with 12 feet clear underneath.

Our advice: We draw every item's height for the November 18 filing and order rigging from the OCCC's in-house crew, which hangs all signs at this venue.

Loading docks

Freeman controls dock access and unloads every contracted carrier; a separate dock for privately operated vehicles is listed in the Exhibitor Services Manual.

Our advice: Ranges and refrigeration arrive crated through Freeman; we book target times and consolidate crates so heavy units reach your space first.

What Purple handles

  • Freeman orders, advance-warehouse freight and dock target times
  • EAC registration with NAFEM by January 4, 2027
  • OCCC Fire Marshal forms for gas, open-flame and heat-producing units
  • Sodexo Live! approval for food used in equipment demos
  • The November 18 drawing with the height of every item
  • Install and dismantle led by our own project manager

Timeline, counted back from move-in

Detailed booth drawings due to NAFEM: November 18, 2026. Islands, split islands, peninsulas, hanging signs and cooler makers must file dimensioned drawings with every item's height, so we need your design approved in early November.

We need design sign-off by early November 2026.

  1. Early November 2026Design sign-off, equipment list with gas, voltage, water, drain and venting needs, and the height of every item.
  2. November 18, 2026Detailed booth drawing filed with NAFEM for islands, split islands, peninsulas, hanging signs and cooler makers.
  3. Late November to December 2026Production in Fishkill, NY; Fire Marshal heat-device and Sodexo Live! demo-food forms filed.
  4. January 2027Purple registered as your EAC by January 4; freight to the advance warehouse about three weeks before move-in.
  5. February 7–10, 2027Move-in from 8 a.m. Sunday; our project manager installs, connects and tests every unit before the 4 p.m. Wednesday deadline.
  6. February 11–16, 2027Show days February 11–13, then dismantle from the 3 p.m. Saturday close; freight out by noon Tuesday, February 16.

Purple planning timeline. Official move-in, freight target and order deadlines come from your exhibitor kit and assigned schedule; we confirm them against your booth when you book.

The NAFEM Show exhibitor questions

Questions exhibitors ask us before The NAFEM Show

How much does a booth at The NAFEM Show 2027 cost?

For a maker running equipment live, budget around a 20×20: $16,000 to $40,000 rented, $50,000 to $120,000 custom. Here the number moves with utilities: each gas, water and drain hookup, OCCC electrical and rigging, and Fire Marshal review of heat-producing units. Space is billed separately by NAFEM at $42 per square foot for members in 2027.

When are booth drawings due for The NAFEM Show 2027?

NAFEM wants detailed drawings, with the height of every item, by November 18, 2026 from islands, split islands, peninsulas, any booth with a hanging sign, walk-in cooler, refrigerator or freezer makers and 2025 violation recipients. NAFEM can ask any other exhibitor for one too. We need your design approved in early November to file it on time.

Can we rent a booth for The NAFEM Show, and what does it include?

One fixed proposal bundles the rented frame and graphics, booth lighting and demo counters cut to the size of your units with shipping, install and dismantle, from $3,500 for a 10×10 and $7,500 to $15,000 for a 10×20. For a NAFEM inline we hold the frame to the 8-foot back wall and keep anything within 5 feet of the aisle below 4 feet.

Can our own staff set up the booth at the Orange County Convention Center?

NAFEM lets full-time employees set up their own exhibit and hand-carry what they can, but dollies and flat trucks are banned and Freeman unloads every carrier at the dock. Electrical and rigging stay with OCCC crews. Any outside installer must be an EAC registered with NAFEM by January 4, 2027, with insurance on file; we register as yours.

Can we run gas or cooking equipment in our NAFEM booth?

Yes, with written approval. Every gas appliance, open flame or heat- and smoke-producing device goes to OCCC Event Management and the Fire Marshal with documentation, judged against NFPA 96, and a review fee applies. You need ventilation, safety equipment and a tagged 5-pound ABC extinguisher within 30 feet. We assemble the submission from your spec sheets.

Can we serve food or drinks at The NAFEM Show?

Sodexo Live! is the OCCC's exclusive caterer. Food you bring for an equipment demo needs its approval form, and coffee, soda, water or popcorn used to pull traffic must be bought from it. A hospitality spread with alcohol is allowed only 3 to 5 p.m. on February 11 and 12, bought from Sodexo and poured by its licensed bartenders, and all prep stays 5 feet from the aisle.

How tall can our booth be at The NAFEM Show 2027?

Inline and corner booths stop at an 8-foot back wall, with a 4-foot limit within 5 feet of the aisle; perimeter booths reach 12 feet. Islands, split islands and peninsulas build to 16 feet, including multi-story exhibits with OCCC permits, and hanging signs top out at 20 feet with 12 feet clear underneath.

What does drayage cost at the Orange County Convention Center, and who pays it?

Freeman, NAFEM's general services contractor, bills material handling by the hundredweight through the Freeman Order Forms in the Exhibitor Services Manual, and the invoice is yours. Ranges and refrigeration add weight fast, so we pack units into fewer crates and list the estimated Freeman handling charge on your proposal.

Can we reuse our NAFEM booth at other shows?

We frame the counters and walls in modular sections with removable height panels, so an Orlando island can step down to an 8-foot inline for the National Restaurant Association Show in Chicago in May 2027, or regroup as a 10×20 for The NAMA Show in New Orleans and International Pizza Expo in Las Vegas. We keep the kit in storage between dates and reprint graphics for each audience.

When is The NAFEM Show 2027?

The NAFEM Show 2027 runs Thursday to Saturday, February 11–13, 2027, in Orlando. The floor opens at 9 a.m. daily and closes at 5 p.m. on Thursday and Friday and 3 p.m. on Saturday. Exhibitors start earlier: target move-in begins at 8 a.m. on Sunday, February 7, and every exhibit must be set by 4 p.m. Wednesday.

Where is The NAFEM Show 2027 held?

At the Orange County Convention Center, 9800 International Drive, Orlando. NAFEM names Orlando International Airport (MCO) as the closest airport, about 12 miles away by the OCCC's figure, and attendees can pick up badges in its Terminal B. onPeak is the only official housing company, and five hotels sit within a 15-minute walk of the OCCC.

How many people attend The NAFEM Show?

NAFEM expects about 20,000 foodservice professionals and more than 600 exhibitors at the 2027 show in Orlando. Its own history calls the 2019 Orlando edition the largest to that date, with over 22,000 registered. NAFEM's 2027 prospectus adds that 92% of attendees come to view and get hands-on with new products.

Who organizes The NAFEM Show?

NAFEM, the North American Association of Food Equipment Manufacturers, a Chicago-based trade association of commercial foodservice equipment and supplies makers. It held the first NAFEM Show in Dallas in 1973 and moved the show from fall to February in 2009. After the 2021 show was cancelled, it returned to Orlando in 2023 and met in Atlanta in 2025.

How do I get a booth at The NAFEM Show?

Members and non-members can exhibit if their main business is marketing and selling their own products from the NAFEM Approved Product Category List and they have spent at least a year manufacturing and testing a working prototype. Non-members request an application from NAFEM. Space left after the priority-point selection goes first-come, first-served until contracts close January 4, 2027.

Before you sign with anyone

Five questions to ask any exhibit builder for The NAFEM Show:

  1. Is every fee on the proposal, including what the show contractor bills?
  2. Who builds the booth: your own shop or a subcontractor?
  3. Will your project manager be on the floor for install and dismantle?
  4. What exactly is in the rental, and what is billed by the show?
  5. Where does the booth go after the show, and what does storage cost?

Common situations

Already own a booth? We refresh the graphics, repair what is worn, ship it, install it and store it between shows. You keep the structure you paid for.

Exhibiting from outside the US? We are your team on the ground: freight to the advance warehouse, show-service orders, installation and storage, with one project manager answering your emails in your time zone.

Short on time? A rental with your graphics can be ready in two to three weeks. We tell you on the first call what is realistic for your date.
